Is it true that iTunes backs up also some Jailbreak data in the process of backing up?
So that, if I want to remove JB, after restoring my device's firmware, if I restore data from my backup, are there some files from jailbreak that are moved back to my device?
Which are those and is not a security hazard to have them in my device while using iTunes?
Again, thx for any input, you guys have been very helpful.

Correct. When you make a backup with iTunes, it will also back up some parts of the jailbreak (for the most part, it's just preference files for apps from Cydia). These remnants will not pose a security threat, but may (probably won't, though) make the device act a bit funny.

I think certain documents are backed up. But those alone don't actually do anything, except to use up some space.

EDIT: Dialexio beat me to it. His explanation is more detailed anyway
