In the description of the infinite cheat video, you put:

"Also, about the Action Replay codes, replace 80 to 7F, if you don't want any bad surprises..."

Which cheat was this directed for and how does 1 less prevent bad surprises?

(Just wondering, it's been years since I have made any cheats)

Well, at gshi.org, you can find the code:
7E0C4E80
7E0C4F80
But this code, make your gun have no ammo, because it's negative.
So, i use 7F instead, to make it positive: Real infinite ammo.
