I just picked up Super Mario Kart earlier today and was a bit curious as to what people like the most on the platform.

I would go with these.:

Shadowrun
Zelda A Link To The Past
Chronno Trigger
Super Punch-out
Super Mario All-Stars
Super Mario RPG
Final Fantasy IV
Donkey Kong Country 1,2,3
Sunset Riders
Street Fighter II
Rock'n Roll Racing
Biker Mice From Mars
Mortal Kombat 2,3
TMNT: Turtles In Time
Bomberman 4
BlackThorne
Tetris Attack
X-Men Mutant Apocalypse

And there are plenty more I can remember and that are great games.
SNES has a fantastic library!

if you liked Super Mario Kart, you will love Street Racer too.

Keeping on racing, you may try Top Gear, Top Gear 2 and 3000 (the Japanese version is called Top Racer), there is also a good game named Bikers From Mars, and Rock n Roll racing is awesome too.

Tell what genre you like and I can give you more suggestions (snes is my favorite system)

I don't have a top list, but recently I've been enjoying Sutte Hakkun, a Japanese puzzle platformer with an unofficial English translation patch.
Great little game series. Don't know if you know this but there is actually 5 Sutte games on the SNES.

1. Sutte Hakkun
2. Sutte Hakkun Event Version
3. Sutte Hakkun Nintendo Power Version
4. Sutte Hakkun Event Version 2
5. Sutte Hakkun 98

I was aware there were some others, might not have known of all of them. Do they all have their own level sets, or is there some overlap?

It's been a good few years since I have played them but if I remember right they all have their own unique levels except Sutte Hakkun Nintendo Power Version which has 62 unique levels at 50 remixed levels from Sutte Hakkun Event Version. The 50 levels are familiar but changed enough still to be fun.

I have seen that SFC is a lot cheaper than SNES stuff, so I bought Mario & Wario because it's entirely in English and is cheaper than the hell that is finding some SNES games for a cheap price (Earthbound and Megaman X2, looking at you).

My short list, off the top of my head, (and only picking from carts I actually own and avoiding ports that are better experienced elsewhere) would be;

Kiki Kaikai (Pocky & Rocky)
Super Aleste
Jaki Crush
Actraiser
Super Mario Kart
R-Type III
Demon's Blazon (Demon's Crest)
Super Metroid
Rockman & Forte (Megaman & Bass)
Area 88 (UN Squadron)
